serves 8 small eaters or 4 big eaters; can be frozen
- 3 cups washed basil leaves, loosely packed
- 1/4 cup pine nuts
- 4 cloves of garlic
- 1/4 cup olive oil
- 1/2 cup parmesan and/or romano cheese, grated
put basil leaves, pine nuts, and garlic into food processor, blend until well mixed, use spatula to push it down a few times
continue blending while adding olive oil
transfer to a bowl and mix in the cheese by hand, then add a little bit of hot water from the pasta cooking (a tablespoon or so) to it just before serving
