Ken Rossen’s Brownies

  • 4 eggs @ room temperature
  • 4 oz. unsweetened chocolate
  • ½ teaspoon salt
  • 1 stick butter
  • 2 cups sugar
  • 1 cup flour

Grease a 9×13 pan. Preheat the oven to 350 degrees.

Melt the chocolate and the butter; set it aside to let it cool.

Beat the eggs until very light in color and very foamy. Add the sugar and beat until smooth.

Add the chocolate mixture into the egg mixture. Stir with a rubber spatula, mixing gently and NOT completely.

Add the flour and barely mix it in, leaving small lumps.

Pour into the greased pan and bake for 25 minutes or until it tests clean with a knife. To do this, stick a table knife straight down into the center and withdraw it. If there is any wet batter on the knife, keep cooking. If there is nothing or just a couple of tiny crumbs, you are done.
