Molded Green Salad
- 1 small pkg Lime Jello
- 1 cup boiling water
- 3 oz pkg cream cheese
- 1/2 cup salad dressing
- 1 cup crushed pineapple, drained
- 1/2 cup pecans, chopped
- 1 pkg Dream Whip (or Cool Whip), whipped (2 cups)
Dissolve Jello in hot water. Let cool. Mix together cream cheese, salad dressing, pineapple, and pecans. Stir all into Jello. Fold Dream Whip into mixture. Pour into mold and refrigerate until set. Unmold onto serving plate and garnish with mint leaves and cherries.
This salad began as lime salad. Irreverent children, on successive Christmases, changed it to “moldy salad” and then to “green slime”. Nevertheless, it remains their favorite salad.
