This is adapted from a recipe I found online. The recipe is brain-dead simple, online recipe pages tend to go on and on (probably to increase their “eyeball time”) and it’s hard to find where they cut to the chase.
- 1/4 cup extra virgin olive oil
- 3 Tbsp balsamic vinegar
- 4 tsps dijon mustard
- 1 clove garlic, minced
- fresh ground pepper, to taste (for us, that’s a lot!)
- parsley, for garnish
Prepare the balsamic glaze by combining ingredients above.
Slice a small head of red cabbage into thick 1-inch “steaks”; you may want to cut out some of the thickest part of the cabbage head as being rather tough.
Brush steaks with prepared balsamic glaze and bake at 400F for about 30 to 45 minutes until tender.
