- 2 egg whites
- 1/2 tsp vanilla
- 1/4 tsp salt
- 1/2 cup sugar
- Optional: 1 cup chocolate chips, 1 cup chopped nuts
Preheat oven to 450º
Beat egg whites, vanilla, salt in mixing bowl until very foamy. Gradually add sugar while mixing. Beat until stiff peaks like Fluff, but a little softer, and the sugar is all dissolved.
Fold in chocolate chips and nuts.
Use a tablespoon to scoop onto lightly greased cookie sheets.
TURN OFF oven and put meringues in. Let sit for 5 hours in cooling oven.
Don’t put meringues too close together as they expand a little.
2.5 recipes (5 egg whites) will fit onto 2 large cookie sheets if not adding chips or nuts.
The key thing to remember is that you’re not so much baking these, it’s more like you’re drying them out.
